caprese chicken sliders

You and your pup don’t need to be Italian to love this chicken sandwich amped up with classic Caprese flavors. Splurge on fresh basil when in season. Your pup may not be very interested in the bun, so feel free to skip it and serve this bun-less. This recipe yields 12 sliders.

Gluten-free-adaptable - simply go bun-less

No added sugar or added salt

INGREDIENTS

1 ½ lbs boneless skinless chicken breasts

12 slices dry salami

3 oz mozzarella, thinly sliced or shredded

12 slider buns (optional for dogs), toasted

½ c basil leaves

1 small ripe red tomato, core and seeds removed, cut crosswise into 12 slices

INSTRUCTIONS

  1. Place the chicken between sheets of plastic wrap and pound with a mallet or your fist to half-inch thickness. Remove the plastic wrap and cut the chicken into 12 pieces roughly equal in size.

  2. Place the salami in an even layer in a nonstick skillet over medium heat; you may need to do this in batches. Cook, flipping occasionally, until starting to crisp, 3-5 minutes. Transfer to a paper towel lined plate.

  3. Heat 1 tsp oil in the skillet over medium-high heat. In batches, cook the chicken in a single layer until one side is done, about 5-7 minutes. Flip the chicken over and evenly distribute the mozzarella on top of the now-exposed cooked side of the chicken. Let cook undisturbed until the chicken is cooked through and the mozzarella is melted, about 5-7 more minutes.

  4. To assemble: Arrange the slider bun bottoms on a clean work surface. Divide the chicken evenly among the bun bottoms, then top with basil leaves, salami, and tomato. Top with the slider bun tops.
